Tomato sauce was a staple growing up. It pretty much decorated everything. Well, that maybe a bit of an exaggeration but what's not to love?! The bright red colour and the tangy, tasty tomato flavour marries so well with so many dishes.
The issue with many conventional tomato sauces is the list of 'ingredients'. Making your own tomato sauce means you're in control of the ingredients, so you can make a healthy, wholesome sauce that you and your family will love.
No time to make your own tomato sauce? It doesn't have to take that long, depending on which recipe you use, but if you don't have time, you can always stock up and make sure there's some in the pantry. If you have the time, this tomato sauce recipe may hit the spot!
INGREDIENTS:
1 1/2 kilos tomatoes roughly chopped (we use tomato puree and tomato paste when we have no tomatoes!)
2/3 cup apple cider vinegar
3 teaspoons salt
1/2 cup coconut sugar
1 clove garlic sliced thinly
1 teaspoon fresh ginger grated (or 1/4 teaspoon ground dried ginger)
1/2 teaspoon whole cloves (or 1/4 teaspoon ground cloves)
1/2 teaspoon allspice (ground)
3 teaspoons black peppercorns
1/8 teaspoon cayenne pepper
INSTRUCTIONS:
Place all ingredients in a large saucepan and bring to the boil, stirring.
Simmer for 2-3 hours, covered and stirring from time to time. If the sauce hasn't achieved your desired consistency, continue to simmer uncovered until it reaches the consistency you prefer.
Strain half of the mixture through a sieve into a bowl, and then the other half. Use a spoon to push sauce through the sieve and extract as much liquid as possible. Discard solids.
Pour hot mixture into a medium-sized sterilised bottle and seal.
Store in a cool and dark place. Once opened, store in the fridge.
Thermomix Instructions:
The awesome thing about using a thermomix or a blender is that all the ingredients are incorporated into the sauce, retaining all their goodness. It can still be strained but we love the richer, chunkier version!
Add all ingredients to TM bowl and blitz - 10 seconds/speed 8.
Cook for 40 min/VAROMA/speed 2.
When sauce has finished cooking, blitz for 1 min/speed 10. Be extremely careful when opening the lid as it will be HOT. Make sure the liquid has stopped spinning before opening (yes, that's speaking from experience!).
If you want a smoother consistency, use a spoon or spatula to push sauce through a fine sieve into a clean bowl.
Pour into sterilised bottles and refrigerate.
